Juicing

Inspired to maintain the excellent results, and with the promise of Spring in the air, I was motivated to dust off the old juicer. Polished up, in went mostly veggies and out poured the refreshing elixir of health. 

It hasn't been easy increasing my caloric intake to 1500.  Especially after 4 weeks of a Very Low Caloric Diet as in Phase 2.  Add to that, NO starches.  Can handle the NO sugars.  But, starches has been a challenge.

Take eggs, for example; love them sunny side up, so I can dunk my toast, hash browns, sweet plantains, tostones (green double fried plantains) or English muffin, pan cakes (get the picture) all starches into the yolk. So as not to waste my sunny side up, I made a brunch type dish.  Eggs, steak and roasted apples.  Tasty yes.  But not any one of my old favorites.  You know, I never realized until that very moment that I only eat sunny side ups and for that matter poached too, accompanied with a starch.  Two more weeks on Phase 3 and welcome back Starches!  Until then omelets, scrambled and hard boiled eggs for me.

Elixir of Health

Shifting my focus from 'what I can't have' to 'what I can', vegetables came to mind.  Even as a child, cooked veggies never appealed to me.  Raw ones.  Yes. There on the shelf awaiting my attention was the juicer.  Out came the celery, parsley, carrots and apples.  Refreshing, energizing, supporting a healthy immune system, high in anti-oxidants and oh so good.  Forgot all about my 'sunny side ups'...for now.  lol
